Sage Rosemary Chives

This is one of my all time favorites and will be one of yours, too!  This cheese stuffing is equally as good stuffed in chicken breast!

6 pork tenderloins

1/2 cup of chavrie goat cheese

3  tablespoons of olive oil (divided)

1/2 clove of garlic – crushed

1 bunch of chives

1 small bunch of sage

3 sprigs of rosemary

3 sun dried tomatoes ( chopped)

salt and  pepper

Finely chop all of your herbs, and set aside 1/4 of them (to season your meat with later).

In a bowl, cream the goat cheese with one tablespoon of  the olive oil. Mix in your herbs, garlic, chopped sun dried tomatoes, and a  pinch of salt and pepper.

Heat your grill while preparing the next steps…

Trim the fat off of the pork and cut a little pocket through the side, be careful not to cut through to the other side (if you do, it’s okay, just a little messier when cooking).

Evenly divide your cheese mixture between the 6 tenderloins.  You can use a toothpick to close the sides after stuffed, if you wish.

Add the rest of your herbs to the two tablespoons of olive oil….add a little more oil if you wish.  Coat the pork evenly with the oil and herbs…season with a little salt and pepper and barbecue!

* Note  – keep a close eye not to overcook your pork!  You want it cooked…but not overcooked…juicy pork is delicious!
